White rice, hamburger patty, fried egg, brown gravy. Invented in Hilo, perfected statewide.
Hilo invented it — the loco moco was born at Lincoln Grill in 1949 and the Big Island has been refining it ever since. The original is still a double-patty brown-gravy situation; the local versions hold to that standard.
